Supergreen Sweet Potato Toast

Serves 2
  • 1 medium, straight sweet potato
  • Oil spray
  • ¼ cup c’est laV Supergreen
  • ¼ cup Broccoli florets
  • ¼ cup cauliflower florets
  • 2 radishes, thinly sliced
  • ¼ cup mesclun salad leafs
  1. Thoroughly wash the sweet potato. Slice lengthwise, very thinly, to about ¼ inch thickness.
  2. Heat a medium pan over medium heat. When warm, spray with oil spray and add sweet potato slices, about 3-4 at a time. Sear until lightly golden but still firm, about 2 minutes per side. Remove from heat and allow to cool.
  3. To assemble, top every slice with c’est laV Supergreen. Top with broccoli and cauliflower florets, radishes, and garnish with masculn leaves.
  4. Serve immediately, enjoy!
